Peppermint Brownies

Here’s an easy recipe that you still might have time to make if you’re needing another holiday sweet treat. These brownies are fun and festive, topped with a creamy white peppermint-flavored frosting, then topped with crushed peppermint candies or candy canes—what could be more Christmasy?

You just use your favorite brownie mix, but add in some mini-semi-sweet chocolate chips to the batter for extra chocolate flavor! You do have to make the Peppermint Frosting, but that’s just a mix of butter, peppermint extract, powdered sugar, and a little milk. And then top it all off with crushed peppermint candies—yum!

Peppermint Brownies

PEPPERMINT BROWNIES by NancyC
Makes a 9 x 9″ pan, about 9 to 12 brownies

Brownies:
1 box of your favorite fudge brownie mix for a 9 x 9″ pan
The ingredients needed to prepare the mix (water, oil, and eggs)
2/3 cup mini semi-sweet chocolate chips

Frosting:
1/2 cup (1 stick) butter, softened
1/2 teaspoon peppermint extract
3 cups powdered sugar
5 teaspoons milk
3 to 4 Tablespoons finely-crushed peppermint candies or candy canes to sprinkle on top

1. Preheat oven to 350˚F. Grease a 9 x 9″ baking pan or line with parchment paper.

2. Prepare brownie mix according to package directions; then mix the 2/3 cup of mini chocolate chips into the batter. Spread batter in prepared baking pan and bake as directed on brownie package (typically 30 to 36 minutes). Let cool completely, then frost.

3. To make the frosting, cream butter and peppermint extract in a medium size bowl. Gradually add powdered sugar a cup at a time, and the milk a teaspoon or two at a time until you get the desired consistency. Spread frosting over cooled brownies, then sprinkle frosting with crushed peppermint candy.

4. To let the frosting set for easier cutting, put the pan of frosted brownies in the refrigerator for at least a half hour to an hour or longer, then cut brownies into squares and serve.
