
The holidays have come and gone so fast and it’s been a snowy January so far—a frosty welcome to the new year! It’s a great time to make a fresh start—a new year is a new beginning, a new page, and a new chapter—it’s always exciting to have a brand new beginning and to look forward to different ways to grow, learn, and improve. Many of us make new year’s resolutions, but some of us choose a word for the year—it helps keep us on track with our decisions, actions, and goals. It inspires us to move forward into new things. Sometimes a word just sticks out at you and you know it’s your word—one year, my word was Simplify—I knew I needed to cut down on clutter both in material possessions and in my schedule too—to eliminate unnecessary things and activities to make more room for rest, quiet, and time to breathe. To make room for more time to focus on the important things!
This year, I took a Word of the Year quiz, one I found at DaySpring.com. And after taking the quiz, I found my word was Create. Which really lines up with what has been on my mind and heart lately. So it will be a good reminder to me to follow up on different creative projects I’ve been wanting to explore more and grow in. Do you have a word for the year? Baking and cooking are definitely ways you can create things in your kitchen! One of the sweet treats I made for the holidays was Graham Cracker Toffee. It’s super easy and so yummy! And you can make it for any holiday—just use the appropriate holiday sprinkles! The graham crackers are the base for the toffee, with a buttery toffee layer poured over that, and then a layer of melted semi-sweet chocolate chips is spread over that! Then you just sprinkle on chopped pecans (or walnuts or peanuts), toffee bits, and your favorite holiday sprinkles! It also makes a great food gift!

Graham Cracker Toffee
GRAHAM CRACKER TOFFEE by NancyC
Makes 10-12 servings
14 full-size graham crackers
1 cup (2 sticks) salted butter
1 cup firmly packed light brown sugar
2 cups semi-sweet chocolate chips
1/2 teaspoon pure vanilla extract
1/4 cup chopped pecans
1/4 cup toffee bits
Optional: 1 to 2 Tablespoons holiday sprinkles
Preheat oven to 350˚F. Line a 10 x 15″ rimmed baking sheet with parchment paper.
Place graham crackers in a single layer, laying flat, over the entire baking sheet.
In medium-size saucepan, combine brown sugar and butter over medium heat and bring to a boil. Boil for 3 1/2 to 4 minutes, stirring constantly as mixture thickens.
Remove from heat, stir in the vanilla extract, and immediately pour mixture over the graham crackers; spread mixture evenly to cover the crackers completely.
Bake at 350˚F for 7 to 8 minutes, until edges are bubbly. Remove from oven and sprinkle evenly with the semi-sweet chocolate chips. Let sit for 4 to 5 minutes, giving the chocolate chips time to melt, then spread the melted chocolate evenly over the crackers. Sprinkle with the chopped pecans and toffee bits. Add some holiday sprinkles too, if desired.
Cool completely until chocolate sets, about 1 to 2 hours, then break into pieces.
Note: To cool the chocolate more quickly, put the pan of toffee in your refrigerator for 30-60 minutes. You can store this toffee in an airtight container for up to 10 days.

I often make toffee squares for bake sales, they are always popular, but I’ll have to remember to put holiday sprinkles on them.

This recipe reminds me of a recipe that I had several years ago at Christmas. It was called Christmas Crack and it is the BEST Christmas treat you could hope for. And easy to make, hard to resist and impossible to stop eating.It will be part of all my festive treats. OH and not time consuming to make! Fantastic
