Chicken Broccoli Rice Casserole

Hello, friends! Hope you are all doing well during this busy time of year! Things can feel overwhelming when there’s so much to do and think about! Sometimes we just need to stop and take a deep breath before we do anything else. Maybe even have a little coffee or tea break before we tackle the next thing on our To-Do List!

Here’s something else that’s good to think about—making this Chicken Broccoli Rice Casserole. It makes a great main dish—or you could use it as a side dish, too. You could also use any leftover turkey you have from holiday meals instead of chicken. So this casserole may come in handy for you!

Chicken Broccoli Rice Casserole

CHICKEN BROCCOLI RICE CASSEROLE by NancyC
Makes a 9 x 13″ pan

2 (10.5-ounce) cans condensed Cream of Chicken soup
1/3 cup chicken broth
1/2 cup sour cream
2/3 cup mayonnaise
Dash of salt, pepper, and garlic powder
1 (12-ounce) bag frozen broccoli florets, thawed
2 cups cooked and diced or shredded chicken
2 cups cooked rice
3 cups shredded Cheddar cheese, divided
2 cups crushed buttery round crackers (about 42)
1/3 cup butter, melted

Preheat oven to 350 ̊F. Grease or spray a 9 × 13′′ pan or baking dish with non-stick spray; set aside.

In a large mixing bowl, stir together the condensed soup (undiluted), chicken broth, sour cream, mayonnaise, salt, pepper, garlic powder, thawed broccoli, chicken, rice, and 2 cups of the shredded cheese (save the remaining 1 cup for sprinkling on top).

Spread mixture evenly into your prepared 9 × 13′′ pan or baking dish. Sprinkle with the remaining 1 cup of shredded cheddar cheese.

Mix the crushed crackers with the melted butter in a small bowl until crumbs are moistened, then sprinkle evenly over the top of the casserole.

Bake at 350 ̊F, uncovered, for 30 to 35 minutes, until bubbly at edges and broccoli is tender. Let cool for about 5 minutes, then serve.
