
I’m a big fan of granola and I usually make my own because I enjoy experimenting with different ingredients. This is a pretty basic granola, sweetened with honey and a little brown sugar. It has sliced almonds in it, and I also added some almond extract for even more flavor. The golden raisins add a little more sweetness and the golden color just looks nice mixed in with everything else. 🙂

If you want to make a really simple version of this, you could leave out the almond extract and the raisins—that would get you down to just 6 ingredients, which pretty simple for granola. And it just takes about 30 minutes to bake, so it doesn’t take long. You’ll get about 6 cups of granola–if that’s too much for you, you could always halve the recipe or share some with a friend! 🙂
Honey-Almond Granola
HONEY-ALMOND GRANOLA by NancyC
Makes about 6 cups
1/3 cup canola oil or light olive oil
1/2 cup honey
1/3 cup packed light brown sugar
1/2 teaspoon salt
Optional: 1/2 teaspoon almond extract
4 1/2 cups rolled oats
1 cup sliced almonds
1 cup golden raisins
Preheat oven to 325˚F. Line a 13″ x 18″ rimmed baking sheet with parchment paper; set aside.
In large bowl, mix together the oil, honey, brown sugar, salt, and almond extract (if using). Fold in the rolled oats and sliced almonds, mixing everything together well, making sure all the oats and almonds are coated.
Spread mixture evenly on lined baking sheet and bake for 28 to 32 minutes, until golden, stirring halfway through the baking time to help the granola bake evenly.
When finished baking, remove from oven and stir in the golden raisins while granola is still on baking sheet. Let it cool completely on pan (it will get crunchier as it cools).
After granola has cooled, stir again, breaking up any clumps, and serve it with milk as a cereal or sprinkle it over yogurt to make a breakfast parfait. It makes a great snack, too. Store in an airtight container at room temperature for up to 2 weeks.

My husband and I love granola! Not only it is delicious but it satisfies when the hunger pangs strikes! I love how your recipe only requires several ingredients and could even be cut down to 6! These kind of recipes are my favorite because not only it is easy to make but packs a punch with flavor!
