
I still have blueberries in my freezer, from when I picked them a few weeks ago, so here’s another blueberry recipe! I can’t believe I never made this before, because I’ve made a lot of different kinds of banana breads, but apparently I never made Blueberry Banana Bread! Until now. And it is really good!

This Blueberry Banana Bread is full of banana and blueberry flavor, and so good and moist! It also has a sugary coating on top, since it’s sprinkled with coarse decorating sugar before you pop it in the oven. But you can leave off the sugar if you prefer—it’s yummy either way! It’s great for breakfast, brunch, or an afternoon snack. When it’s hot out, enjoy this quick bread with some iced tea. When the weather is cool, have it with a cup of hot coffee or hot tea!

Blueberry Banana Bread
BLUEBERRY BANANA BREAD
Makes one 9 x 5″ loaf
2 cups all-purpose unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup (1 stick) softened unsalted butter
2 large eggs
1/4 cup sour cream
1 1/2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (about 2 medium-large bananas)
1 1/3 cups fresh blueberries
Optional: White coarse decorating sugar
Preheat oven to 350˚F. Grease or spray a 9 x 5″ loaf pan; set aside.
In a medium-size bowl, mix flour, baking soda, and salt.
In a large bowl, cream sugar and butter together. Mix in the eggs, sour cream, and vanilla, then stir in the mashed bananas. Add the flour mixture to this butter/sugar mixture, mixing just until combined. Fold the blueberries into the batter.
Spoon batter into your prepared loaf pan. If desired, press additional blueberries into the top of the batter. Then, if desired, sprinkle white coarse decorating sugar over the top (or you can omit the sugar if you prefer).
Bake at 350˚F for 65 to 70 minutes or until a toothpick inserted in center comes out clean. Cool 20 to 30 minutes in pan, then remove from pan and cool completely on a wire rack.
