Broccoli Slaw

Broccoli is such a healthy veggie, and I love coleslaw, so I thought I’d put the two together and try making Broccoli Slaw. It sounded like a win-win idea! 🙂 I saw a package of pre-shredded broccoli slaw mix at the grocery store, so using that instead of shredding your own really saves a lot of time! All you have to do is add in a few other ingredients to give this slaw some extra flavor and texture—like red onion, dried cranberries, sliced almonds, and some fresh parsley.

You do have to let this slaw refrigerate for at least 2 hours before serving, so keep that in mind when you make it! This slaw is a delicious way to up your broccoli intake and it’s a great, light dish for warm weather months! The dressing for this slaw is easy to adjust to suit your taste—just add a little more honey for a sweeter dressing or a little more vinegar for a more tart taste!

BROCCOLI SLAW

BROCCOLI SLAW by NancyC
Makes 6 to 8 servings

2/3 cup olive oil
1/2 cup apple cider vinegar
1/4 cup honey
1 (16-ounce) package broccoli slaw mix
1 cup chopped red onion
1 cup dried cranberries
1 cup sliced almonds
1 cup chopped fresh parsley (save some leaves for garnish, if desired)

In a small bowl, whisk together the olive oil, vinegar, and honey; set aside.

In a large bowl, add broccoli slaw mix, chopped red onion, dried cranberries, sliced almonds, and chopped parsley. Toss ingredients together.

Drizzle the olive oil dressing over the slaw ingredients and stir or toss to coat everything well.

Cover and refrigerate at least 2 hours. When ready to serve, stir or toss ingredients right before serving and garnish with additional parsley leaves, if desired.
