
If you’re a fan of pecan pie, you would absolutely love these bars! They taste great and they’re easy to make, too! Someone at work shared this recipe around the holidays but I didn’t have the chance to make it till now. These bars are sooooo good! They have a simple crust that you make and bake as a bottom layer, and then you add the filling on top of that and bake a little more!
These Pecan Pie Bars are made in a 9 x 13″ pan, so there’s plenty for everyone to enjoy! After they’re all done baking, let them cool completely and then you can cut them into either nice big squares or smaller bars. I cut mine into bigger squares, but since these bars are so rich, you may want to cut them smaller! I made a few little changes from the original recipe—I baked the crust about 5 minutes less, and added a little more salt and a little more pecans to the filling. Hope you enjoy these!

Pecan Pie Bars

Makes 15 to 30 bars
Crust:
1 cup (2 sticks) butter, softened
2 cups all-purpose unbleached flour
1/2 cup powdered sugar
Preheat oven to 350˚F. Line a 9 x 13″ pan with parchment paper; set aside.
In large bowl, combine the 3 crust ingredients and mix well (dough will be thick and crumbly). Press evenly into the bottom of the pan. Bake at 350˚F for 20 minutes, until edges are lightly browned, and remove from oven.
While the crust is baking, mix the filling…
Filling:
3 large eggs
1/2 cup granulated sugar
1/4 cup melted butter
1 cup light corn syrup
1 teaspoon pure vanilla extract
1/4 teaspoon salt
2 cups chopped pecans
In medium-size bowl, cream together the eggs and sugar. Then add in the butter, corn syrup, vanilla, salt, and pecans, mixing everything together well. Pour over baked crust and bake at 350˚F for 30 minutes. Cool completely, then cut into large squares or smaller bars.
