Now that summer is gradually turning into fall, I’m craving oatmeal cookies! And these thick and chewy Chocolate Chip Coconut Oatmeal Cookies really hit the spot! They’re made with coconut oil instead of shortening or butter, and they also have some sweetened coconut flakes mixed into the dough to give them a nice, light coconut flavor. The chocolate chips are a nice touch, too—chocolate chips are always a good idea, right? 🙂
These cookies make a great after-school snack or dessert. And I like to think that the oatmeal in these cookies makes them a little healthier, too! 🙂
Chocolate Chip Coconut Oatmeal Cookies
CHOCOLATE CHIP COCONUT OATMEAL COOKIES by NancyC
Makes about 27 large cookies
1 cup coconut oil
1 cup granulated sugar
1 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 Tablespoons milk
1 1/2 cups all-purpose unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
3 cups quick-cooking oats
1 cup sweetened coconut flakes
1 cup semi-sweet chocolate chips
Preheat oven to 350˚F. Line cookie sheets with parchment paper; set aside.
In large bowl, blend coconut oil and sugars. Add in the eggs, vanilla extract, and milk, blending everything together well. Then add the flour, salt, and baking soda, mixing well.
Stir in the oats, coconut flakes, and chocolate chips, distributing them evenly in batter.
Drop by 1/4 cupfuls onto prepared cookie sheets, about 2 inches apart (you can also use a scoop to drop the cookie dough on the sheet).
Bake at 350˚F for 15 minutes or until golden brown and centers are set. Let cool for a few minutes on pan, then transfer to wired rack to cool completely.

These are larger-size cookies, so one is plenty to snack on! They taste great either warm out of the oven or cooled. You can also freeze these cookies for several months if you want to make them ahead of time! Are you an oatmeal cookie fan?
