Chocolate Colossal Cookies

Quite awhile ago, I made some yummy Colossal Cookies, and thought a chocolate version of these cookies would be good too! This chocolate version is made with unsweetened cocoa powder and chocolate chips, so they’re full of chocolate flavor! These Chocolate Colossal Cookies were as good as I thought they would be! And they’re flourless, just like regular Colossal Cookies are. But you’d never know it! 🙂

Chocolate Colossal Cookies

CHOCOLATE COLOSSAL COOKIES by NancyC
Makes about 40 large cookies

1/2 cup (1 stick) unsalted butter, softened
1 1/2 cups granulated sugar
1 1/2 cups packed light brown sugar
4 large eggs
2 teaspoons pure vanilla extract
2 cups creamy peanut butter
2 teaspoons baking soda
2/3 cup unsweetened cocoa powder
5 cups quick cooking oats
2 cups semi-sweet chocolate chips

Preheat oven to 350˚F. Line cookie sheets with parchment paper; set aside.

In an extra-large bowl, cream butter, granulated sugar, and brown sugar until smooth.

Beat in eggs, one at a time, then stir in the vanilla extract and peanut butter, mixing well.

Mix in the baking soda, then mix in the cocoa powder. Next, stir in the oats, and then fold in the chocolate chips—you will end up with a thick dough).

Drop 1/4 cupfuls of dough 2 to 3 inches apart on parchment-lined cookie sheets. Slightly flatten the tops of the dough for each cookie with a fork.

Bake at 350˚F for 15 to 17 minutes. Cool for a few minutes on cookie sheets, then place cookies on wire racks to cool completely.

Like I mentioned above, these cookies are flourless. But they have plenty of oatmeal in them to give them a thick and chewy texture! And they taste great! I like to think that all that oatmeal makes them somewhat healthy! 🙂 Are you a fan of this kind of cookie?
