
If you’re a fan of bagels, here’s a quick and easy sandwich you can make that’s perfect for lunch! I made this particular bagel sandwich with Bagel Thins® Bagels but you can use a regular bagel too—either store-bought, from a bakery, or homemade! You can also use your favorite hummus in this bagel sandwich—I used black bean hummus, but any flavor will work, so use your favorite, whether it’s store-bought or homemade!
When I make bagel sandwiches, I prefer using whole wheat bagels, but again, use your favorite type of bagel. This recipe also has plain Greek yogurt, salsa, cilantro, and sliced olives in it, so it’s definitely on the healthy side!
Black Bean Hummus Bagel
BLACK BEAN HUMMUS BAGEL
Makes 1 bagel sandwich
1 bagel (use your favorite kind)
4 Tablespoons black bean hummus (or use your favorite hummus)
2 Tablespoons plain Greek yogurt or low-fat sour cream
2 Tablespoons of your favorite salsa
1 Tablespoon chopped fresh cilantro
2 Tablespoons sliced black olives
Separate and toast a bagel.
Place bagel down on a large plate, open-faced, and top each half with 2 Tablespoons of hummus, 1 Tablespoon of plain Greek yogurt (or low-fat sour cream), 1 Tablespoon salsa, 1/2 Tablespoon chopped fresh cilantro, and 1 Tablespoon sliced black olives.
Serve immediately. For more servings, just multiply the ingredients by the number of servings you want to make.
