Easy Lemon Bars

This is the perfect time of year for lemony treats! And one of the things that makes these lemon bars so easy to make is that they have a cake mix crust! Since the crust is made with lemon cake mix, it adds even more to the lemon flavor of these bars! The filling is light and creamy, and the dusting of powdered sugar on top adds just the right amount of sweetness!

These Easy Lemon Bars just take minutes to mix up, and you don’t even have to bake the crust before you put the filling over it! You just press the cake mix batter mixture into the pan, then top with the filling mixture, and bake it all for 26 to 28 minutes…so super easy! Easy Lemon Bars

EASY LEMON BARS by NancyC
Makes a 9 x 13″ pan

1 (15-ounce) box lemon cake mix
1/2 cup (1 stick) salted butter, melted
1 large egg
1/2 teaspoon lemon extract
1 (14-ounce) can sweetened condensed milk
2/3 cup lemon juice
Optional: 1 Tablespoon lemon zest
Powdered sugar, for dusting on top

Preheat oven to 350˚F. Grease or spray a 9 x 13″ baking pan, or line with parchment paper; set aside.

For the crust: In a large bowl, mix the dry lemon cake mix with the melted butter, egg, and lemon extract until well-blended (batter will be very thick). Press this mixture evenly into the bottom of the baking pan; set aside.

For the filling: In a small bowl, blend together the sweetened condensed milk, lemon juice, and lemon zest, if using. Pour this mixture evenly over the cake mix batter base.

Bake at 350˚F for 26 to 28 minutes, until lemon filling is set. Let cool completely in pan, then dust with powdered sugar. Cut into bars or squares.

    I like a lemon bar with a definite “bite”!
    A friend made a lemon chiffon cake, which I had never had before. It looked and tasted like nothing I thought it would. Lol The cake was dense and very moist (which was good, but didn’t make me think chiffon!) and there wasn’t nearly enough lemon flavor for me. Lemon bars and lemon blueberry coffee cake are my “go to” desserts.
