When spring and summer come around, I like to make treats with sweet and fruity flavors…like these Triple-Chip Strawberry Cookies! These are super easy to make because Strawberry cake mix is part of the batter! I added in some Strawberry extract too, and really like the flavor that it adds! Not only that, there are three kinds of chocolate chips mixed into the batter—semi-sweet or dark chocolate, milk chocolate, and white chocolate chips, so that means three times the yumminess! 🙂
Triple-Chip Strawberry Cookies
TRIPLE-CHIP STRAWBERRY COOKIES by NancyC
Makes about 15 cookies
1 (15-ounce) box Strawberry cake mix
1 teaspoon baking powder
2 large eggs
1/3 cup canola oil or light olive oil
1/2 teaspoon Strawberry extract (or substitute Vanilla extract)
1/3 cup semi-sweet chocolate or dark chocolate chips
1/3 cup milk chocolate chips
1/3 cup white chocolate chips
Parchment paper, for lining cookie sheets
Preheat oven to 350˚F. Line two cookie sheets with parchment paper; set aside.
In large bowl, blend cake mix and baking powder. Then add the eggs, oil, and strawberry or vanilla extract, mixing everything well (batter will be thick!). Fold in the three kinds of chocolate chips and stir until evenly distributed in batter.
Put rounded balls of dough, about the size of 2 Tablespoons (a scoop about that size works great for this), on cookie sheets, spacing a few inches apart.
Bake at 350˚F for 10 to 11 minutes. Remove from oven and cool cookies for a few minutes on the pan, then remove to a wire rack to cool completely.
