Mint Chocolate Cookies

Mint and chocolate make a great dessert combination and these Mint Chocolate Cookies are not only an easy dessert, they are rich, fudgy, and chewy, too! They’re also full of chocolate mint flavor, thanks to the mint chocolate baking chunks that you stir into the batter. When I say easy, I mean easy…they’re made with chocolate cake mix and just a few other ingredients!

These cookies actually have a brownie-like texture—they’re a nice thick cookie and they make a wonderful treat! And you mix up the batter in one bowl, so clean-up is easy too!

Mint Chocolate Cookies

MINT CHOCOLATE COOKIES by NancyC
Makes about 15 cookies

1 (15-ounce) box chocolate fudge cake mix
1 teaspoon baking powder
2 large eggs
1/3 cup canola oil or light olive oil
1/2 teaspoon pure vanilla extract
1 cup mint chocolate baking chunks
Parchment paper, for lining cookie sheets

Preheat oven to 350˚F. Line two cookie sheets with parchment paper; set aside.

In large bowl, blend cake mix and baking powder. Then add the eggs, oil, and vanilla extract, mixing everything well (batter will be thick!). Fold in the mint chocolate baking chunks and stir until evenly distributed in batter.

Put rounded balls of dough, about the size of 2 Tablespoons (a scoop about that size works great for this), on cookie sheets, spacing about 3 inches apart.

Bake at 350˚F for 10 to 13 minutes, or until set. Remove from oven and cool cookies for a few minutes on the pan, then remove to a wire rack to cool completely.

  1. So a cake mix doesn’t already have baking powder in it?
    I don’t generally have cake mixes so I was trying to figure out if I could make these from scratch. I’m wondering if I just double the baking powder, if that would work.

    • Hi Marijo! I’m not sure if cake mix has baking powder in it–I would think it does. If you make it from scratch just add the baking powder amount from this recipe to your “from scratch” recipe–that should work! Hope you’re having a great Sunday! 🙂

  2. These are delicious! Even people that ‘don’t like chocolate’ love these. The cake mix you originally mentioned is no longer available, at my store, but any marked ‘dark chocolate’ has worked. In the event there are leftovers, they freeze perfectly!!
    Thanks for adding to our favs once again!
