
One of the things I like best about these Strawberry Oat Crumb Bars is that they are made with fresh strawberries instead of jam. I first made these a few months ago and loved the rich, buttery taste of these bars that are big on strawberry flavor! They’re a nice, simple dessert for spring and summer, either on their own or with a scoop of vanilla or strawberry ice cream added on top. You could even drizzle strawberry syrup over the ice cream if you want to get fancy! 🙂
Strawberry Oat Crumb Bars
STRAWBERRY OAT CRUMB BARS by NancyC
Makes a 9×13″ pan, 15–18 bars
- 1 1/2 cups all-purpose unbleached flour
- 1 1/2 cups rolled oats
- 1 cup granulated sugar, divided
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) plus 3 Tablespoons cold salted butter, cubed
- 1 pound fresh strawberries, cut into small chunks
- 2 Tablespoons cornstarch
Preheat oven to 350˚F. Grease a 9×13″ baking pan; set aside.
In large bowl, mix the flour, oats, 1/2 cup of the granulated sugar, brown sugar, baking powder, and salt. Add in the butter, using a pastry cutter or fork, until mixture is crumbly.
Press two-thirds of the crumbly mixture firmly and evenly into the bottom of the prepared pan.
In a medium bowl, add the chopped strawberries, the remaining 1/2 cup granulated sugar, and the cornstarch. Coat berries evenly with the sugar and cornstarch. Spoon strawberry mixture evenly over the bottom crumb layer in the pan.
Sprinkle remaining one-third of the crumbly mixture evenly over the strawberry layer. Bake at 350˚F for 38 to 40 minutes, until top crumb mixture is lightly browned. Cool completely, then cut into squares.

Quick question – what are the 3 Tablespoons cold salted butter for? Should they be added into the mixture with the 3/4 cup of butter? Thanks.

Hi Lisa–that’s part of the amount you use for the crumb mixture–the total amount of butter you use for the crumb mixture is 3/4 cup, plus another 3 Tablespoons, which is almost 1 cup. Hope that helps! 🙂 If you like the texture of your crumb mixture with just the 3/4 cup butter, you can leave the additional 3 Tablespoons out!
