Are you a fan of Chicken & Stuffing? I made it for the first time a few weeks ago. If you’ve ever been intimidated by the thought of making Chicken & Stuffing, I can assure you that this recipe is really super easy and very delicious too! And it doesn’t take long to make if you use pre-cooked chicken.

And that’s why this Easy Chicken & Stuffing Casserole is a great dish to serve when you have guests in your home. Or it’s the perfect meal to make for your family any day of the week! I would even describe this casserole as comfort food and I think you’ll agree after you taste it! This recipe is from Mary & Martha consultant Ann Watson (Thank you, Ann!). I tweaked her original recipe slightly so it would fit nicely in the Mary & Martha Grace & Gratitude™ Casserole Dish, which measures 10 1/2″L x 15 1/2″W x 5″H and holds 3 1/2 quarts.
Easy Chicken & Stuffing Casserole
EASY CHICKEN & STUFFING CASSEROLE
Makes a 10 x 15″ casserole
- 4 cups diced, cooked chicken (cook your own chicken or use frozen and thawed pre-cooked chicken)
- 2 (10.5-ounce) cans Cream of Chicken or Cream of Mushroom soup
- 1 1/4 cups sour cream (or use half sour cream and half French Onion dip)
- 2 (6-ounce) packages Stove Top turkey or chicken stuffing mix
- 1 cup (2 sticks) butter, melted
- 1 cup hot water
- Optional: chopped fresh parsley, for garnish
Preheat oven to 350˚F. Have your casserole dish ready to layer the recipe ingredients in.
Place cooked, diced chicken in an even layer on the bottom of the casserole dish. Spread the 2 cans of soup, undiluted, evenly over the chicken.
Layer the sour cream (or sour cream/French Onion dip) over the soup layer.
For the top layer, mix the Stove Top stuffing mix with the melted butter and hot water until all ingredients are combined. With a large spoon, layer the stuffing mix evenly over the sour cream layer.
Bake at 350˚F for 35 minutes. Remove from oven and let cool a few minutes. Then add some chopped fresh parsley as a garnish, if desired, and serve.

That’s pretty easy, isn’t it? Just serve this casserole with a salad and maybe some rolls and you have a wonderful meal in just under an hour! I’m sure everyone you serve it to will love it! You may even want to think about making this tasty dish for your mom on Mother’s Day!

I made stuffing with chicken once for a party and it was dry as h***… I see adding creamy soup and sour cream would keep that from happening. Will try it next time! Thanks for sharing.
