
Hello and hope you are all staying cool! This is one of the hottest summers we’ve had in awhile! I don’t like to bake or cook much when the weather is this hot—instead, I make a lot of salads, sandwiches, and simple side dishes that require little or no cooking. Like this Easy Creamy Coleslaw…it’s definitely easy to make, since it’s made with a pre-shredded coleslaw mix, so you can mix it up in no time!
This coleslaw is a great summer side dish with grilled burgers, hot dogs, and chicken—or whatever light summer meals you like to make. It’s also perfect for picnics or potlucks—the recipe can easily be doubled or tripled to make for a larger crowd. This coleslaw is also sweetened with honey instead of sugar. I also like to use plain Greek yogurt in the creamy dressing, but you can use sour cream if you prefer.
Easy Creamy Coleslaw
EASY CREAMY COLESLAW by NancyC
Makes about 6 servings
- 1 (14 or 16-ounce) package coleslaw mix (with carrots and purple cabbage)
- Optional: 1/2 cup finely chopped yellow onion or red onion
- 3/4 cup mayonnaise
- 1/3 cup light sour cream or plain Greek yogurt
- 2 1/2 Tablespoons honey
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon celery seed
- 1/2 teaspoon dry mustard
- 2 Tablespoons lemon juice or vinegar—or 1 Tablespoon of each
Place all of the coleslaw mix in a large bowl; set aside.
In small bowl, mix mayonnaise…Pour this mixture over the coleslaw mix in large bowl and toss to coat. Cover and Refrigerate until ready to serve (it helps to refrigerate for at least an hour to blend the flavors).
