Smoked Gouda, Cheddar, and Parmesan Mac ‘n’ Cheese

I am a big fan of Mac ‘n’ Cheese, but this is the first time I’ve made it myself—there really is nothing like homemade, especially if you make this recipe! The Smoked Gouda, Cheddar, and Parmesan Mac ‘n’ Cheese is from the new Duke’s Mayonnaise Cookbook (hardcover, Grand Central Publishing) by Ashley Strickland Freeman and it is wonderful! It’s creamy, cheesy, and has an amazing buttery breadcrumb topping. This recipe is definitely a keeper!

The Duke’s Mayonnaise Cookbook is a keeper, too! All of the recipes include Southern staple Duke’s Mayonnaise as an ingredient, making the wide variety of dishes taste extra good! There are recipes for Breakfast and Brunch, Lunch, Dinner, Sides and Snacks, and Desserts. Here’s a sampling of what you’ll find: Breakfast Strata, Bananas Foster Bread, Peaches and Cream Crepes, Buffalo Chicken Sliders, Cottage Pie, Tarragon Crab Cakes, Loaded Twice-Baked Potatoes, Sweet Potato au Gratin, Blackberry and Peach Crisp, Key Lime Pound Cakes, Triple Chocolate Mousse Cake…just a few of the many delicious things you’ll be inspired to make!

So I chose to make the Smoked Gouda, Cheddar, and Parmesan Mac ‘n’ Cheese. It’s an amazing recipe, and I’m excited to share it with you here!

Smoked Gouda, Cheddar, and Parmesan Mac 'n' Cheese

SMOKED GOUDA, CHEDDAR, AND PARMESAN MAC ‘N’ CHEESE from The Duke’s Mayonnaise Cookbook

Makes 6-8 servings

1 (16-ounce) package corkscrew pasta
1 (8-ounce) package smoked Gouda cheese, shredded
1 (8-ounce) block extra-sharp Cheddar cheese, shredded
4 ounces freshly grated Parmesan cheese
1 1/2 cups Duke’s Mayonnaise
1 cup sour cream
1/4 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup fresh breadcrumbs (I substituted ready-made breadcrumbs)
1/4 cup salted butter, melted

Preheat oven to 325˚F. Cook the pasta in boiling salted water according to package directions until al dente. Drain and transfer to a large bowl.

Stir in the cheeses, mayonnaise, sour cream, cayenne pepper, nutmeg, and salt. Spoon into 6 lightly greased individual baking dishes or a 2-quart baking dish.

Stir together the breadcrumbs and melted butter. Sprinkle over the top. Bake the pasta at 325˚F for 30 minutes, or until the topping is browned and the mixture is bubbly.

Tasty Tip: To make fresh breadcrumbs, pulse a few pieces of (preferably stale) bread in a food processor until crumbly.

  7. In my household, mayonnaise is synonymous with Duke’s! Can’t have it any other way. Golly do I love a tri-cheese Mac and cheese, that smoked Gouda and mayo-sour cream combo takes it to a whole new level.
