
Now that it feels like summer, I find myself craving potato salad. Potato salad is such a great side dish for a simple summer meal or picnic. This potato salad is a little different from your typical potato salad, since it also includes green beans. If you have started or are planning on starting a summer veggie garden and are growing green beans, this is a great recipe for you to use them in!
This potato salad is easy to make, just having four ingredients–red potatoes, green beans, yellow or red onion, and your favorite Italian dressing to toss everything together in. A simple recipe for a simple summer meal–it makes a great side dish you can enjoy all season long!
Green Bean Potato Salad
GREEN BEAN POTATO SALAD by NancyC
Makes 6 servings
- 9 to 10 new red potatoes, cut into quarters (or you can cut into more pieces if some potatoes are a little larger)
- 3/4 pound fresh green beans, cut in half or thirds
- 1 small or medium-size yellow or red onion, thinly sliced (separate into rings)
- 1/2 cup of your favorite Italian salad dressing
Fill large saucepan half full with water and bring to a boil. Add quartered potatoes and cook 8 to 10 minutes, until tender. Drain potatoes and place in large bowl; set aside.
In a medium saucepan, bring 1 1/2 cups of water to a boil. Add green beans, return to a boil, then reduce heat and simmer for 6 minutes. Add onions to beans and cook an additional 2 minutes (beans should be crisp yet tender). Drain beans and onion slices and rinse with cold water. Add beans and onions to the potatoes in the large bowl.
Add Italian salad dressing and toss so that potatoes, green beans, and onions are evenly coated. Serve immediately or cover and refrigerate until ready to serve.
