Simple Vegetable Beef Soup

The chilly and cold weather days are a great time to make a steaming pot of soup! I guess you could call this recipe “semi-homemade”—except for the ground beef, it’s made with canned ingredients. I like it better than canned vegetable soup though, and it’s simple to put together.

You can make this soup in a large pot or Dutch oven. I use my cast-iron Dutch oven and that works really well. Serve this delicious soup with a salad and some thick crusty bread for lunch or dinner—it’s guaranteed to warm you up! 🙂

SIMPLE VEGETABLE BEEF SOUP by NancyC

Makes 6 to 8 servings

  • 1 pound ground beef
  • 2 (14.5-ounce) cans mixed vegetables (like Veg-All®), drained
  • 1 (14.5-ounce) can beef or vegetable broth
  • 1 medium-size onion, finely chopped
  • 2  (14.5-ounce) cans diced or crushed tomatoes, undrained
  • 1 (8-ounce) can tomato sauce
  • 1/2 teaspoon garlic powder
  • salt and pepper, or your favorite seasoning, to taste

In large pot or Dutch oven, crumble and brown ground beef over medium heat until fully cooked; drain excess grease.

Add the canned vegetables and broth into the pot with the beef; stir to combine ingredients. Then add in the chopped onion, diced or crushed tomatoes, and tomato sauce; stir well.

Add garlic powder, and  salt and pepper to taste. Mix all ingredients together and heat to boiling; then reduce heat and simmer the soup for 1 hour. Serve with crusty bread and a salad!

  1. I found this on Pinterest a few months ago and it is now my go to vegetable beef soup recipe! I have made it at least three times and I’m making it again tonight! It’s so delicious and so easy

  2. I just saw this on Pinterest. My family really likes it. I love how easy it is to make. I didn’t have stewed tomatoes one night and used Rotel with lime and cilantro. It gave it a little kick and taste a lot better than I anticipated.
