Sweet Potato-Applesauce Muffins

Next time you’re in the mood to make some muffins, this would be a great recipe to try! These Sweet Potato-Applesauce Muffins are so good! They’re sweet, but not too sweet to have for breakfast—and they’re also great for a snack! Keep them in mind when you’re having a coffee break or tea time, too! These muffins are moist and tender, and when you sprinkle some coarse sugar on top before baking them, it gives the muffins a little extra sweetness on top and a slight sugary sparkle. Sprinkle on as little or as much sugar as you like.

I wasn’t quite sure how the sweet potato-applesauce combination would work out, but you never know until you try, right? After making these and tasting these, I definitely think it’s a great combination! And it’s a tasty way to eat more sweet potatoes! 🙂

Sweet Potato-Applesauce Muffins

SWEET POTATO-APPLESAUCE MUFFINS by NancyC
Makes 16 to 17 muffins

1 (15-ounce) can cut sweet potatoes in syrup, drained and mashed
2 large eggs
3/4 cup applesauce
1/2 cup light olive oil
1/2 teaspoon pure vanilla extract
1 3/4 cups unbleached all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 1/4 cups light brown sugar, packed
Optional: Coarse decorating sugar or turbinado sugar, for sprinkling on top

1. Preheat oven to 350˚F. Line two 12-cup muffin tins with 16 to 17 paper liners; set aside.

2. In large bowl, mix together the drained and mashed sweet potatoes, eggs, applesauce, oil, and vanilla extract.

3. In a medium-size bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and light brown sugar, blending together well.

4. Add the dry ingredients to the wet ingredients in the large bowl, mixing just until combined. Fill lined muffin cups with batter about 2/3 to 3/4 full. Sprinkle muffin tops with coarse sugar if desired.

5. Bake for 20 minutes, until toothpick inserted in centers comes out clean.

6. Remove from oven and let cool in pan for a few minutes, then remove to a wire rack to cool completely.

If you’re a sweet potato fan, you’ll need to try these. And even if you’re not, I think you’d still like them–they have a great flavor! I think it’s fun trying out new flavor combinations like this in my baking—after all, variety is the spice of life, right? I actually haven’t heard that phrase in awhile, but it’s been used to convey that new and exciting experiences make life more interesting. And that can include trying new muffin flavors! 🙂

I’m always up for trying new things and enjoying new experiences. “New” could be anything from baking something new, to joining a new book club, to embracing the unique new things each season brings. “New” can include new possibilities, new opportunities…even new challenges. And there are always new things to learn! The best thing is, we don’t have to be afraid of failing to move into something new, because God is always with us, guiding us along our journey: He’s right there with you.
