Raspberry Jam Oat Crumble Bars

“Crumble” is an understatement when describing these bars, because they are super–crumbly! These Raspberry Jam Oat Crumble Bars have LOTS of crumbly oat topping and, of course, a raspberry jam filling–if you look hard, you can see the filling! :). I was inspired by this recipe at Kraft and made a few simple changes. If you don’t have raspberry jam, use strawberry jam. Or whatever flavor jam you like best. You could even use spreadable fruit if you want to cut down on the sugar.

These are easy to make and really yummy! You can make them in an 8 x 8″ or 9 x 9″ square baking pan. If you use a 9 x 9″ pan, the crumble topping won’t be quite as thick, since the pan is a little bigger–so your bars will be slightly thinner, too. But they’ll still be plenty crumbly. And since these bars are so very crumbly, make sure you have a plate to catch those crumbs when you’re eating these!

RASPBERRY JAM OAT CRUMBLE BARS by NancyCreative, adapted from Kraft Recipes

Makes an 8 x 8″  or 9 x 9″ pan (I used an 8 x 8″ pan for this batch)

  • 1 1/2 cups quick-cooking oats
  • 1 1/2 cups all-purpose unbleached flour
  • 1 cup well-packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 3/4 cup  (1 1/2 sticks) butter, chilled
  • 1 cup (or one 12-ounce jar) Red Raspberry Jam (I used seedless jam)
  • 1 cup pecans, coarsely chopped

Preheat oven to 350˚F. Line an 8 x 8″ or 9 x 9″ pan with parchment paper or spray with cooking spray; set aside.

Mix oats, flour, brown sugar, and baking powder in a large bowl. Cut in butter with pastry blender until mixture resembles coarse crumbs.

Press 3 1/2 cups of the oat mixture firmly onto the bottom of your square baking pan. Spread jam over crust. Mix pecans with remaining crumb mixture, then sprinkle over jam (it may look like you have too much crumb mixture for the top, but put it all on!)

Bake at 350˚F for 30 minutes or until topping is lightly browned. Cool completely on wire rack.

These bars would taste great warm with a scoop of ice cream, too. I love easy recipes like this! And I usually have all these ingredients on hand anyway, so that makes it even more convenient. Do you like jam bars, or do you have another favorite recipe using jam?

Banana Bread (Inspired by the Disneyland Hotel)

I was in a banana bread-making mood last weekend. And I just so happened to come across this recipe at Food.com, where they mentioned that this banana bread is served at the Disneyland Hotel. Not having ever stayed there myself, I hadn’t ever tasted their banana bread, but it sounded like a great recipe to try! After all, I’m sure they serve wonderful food at the Disneyland Hotel, right down to their banana bread. 🙂

I made a few small changes to the recipe and decided to add some pecans to it, too. My baking time was also a little less than what the original recipe had mentioned. This is a really good basic banana bread with a rich, buttery taste, so if you have some ripe bananas you will need to keep this recipe in mind! The batter is thick and creamy and bakes into 2 yummy 8 x 4″ loaves. And believe me, you will be glad you have 2 loaves of this banana bread to enjoy!

BANANA BREAD (INSPIRED BY THE DISNEYLAND HOTEL),  slightly adapted from Food.com

Makes two 8 x 4″ loaves

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons milk
  • 2 cups mashed ripe bananas
  • 1/4 teaspoon pure vanilla extract
  • 3 cups unbleached flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chopped pecans

Preheat oven to 350˚F. Grease and flour two 8 x 4″ loaf pans; set aside.

In large bowl, cream softened butter and sugar until well blended. Add eggs one at a time, mixing well after each addition. Add milk, mashed bananas, and vanilla, mixing everything well.

In medium bowl, whisk together flour, salt, and baking soda. Add dry ingredients, a third at a time, to mixture in large bowl, stirring until everything is well blended. Fold in chopped pecans and stir until they are evenly incorporated into the batter.

Spoon batter in equal amounts into two 8 x 4″ loaf pans and bake at 350˚F for 52 to 55 minutes or until toothpick inserted in center comes out clean.

Remove from oven and cool for 10 minutes, then remove loaves from pans and cool completely on wire rack.

Or, if you want to eat this banana bread warm, let it cool for a total of about 15 to 20 minutes–it will be easier to slice if you let it cool a little.

I’ve been to Disneyland, but not Disney World. I haven’t stayed at any of the Disney Resort Hotels, but I’m sure they would be wonderful! Have any of you stayed at a Disney Hotel and have you had their banana bread?

Dark Chocolate-Cinnamon Pecan Coffee Cake

The title read, A Cake You Can Eat for Breakfast and Dessert.” Well, that got my attention! The Yahoo Food article also said “A cup of coffee will disguise this treat as breakfast, and a scoop of ice cream transforms it into dessert.” Perfect! I always love recipes that give you that kind of flexibility! 🙂

So of course I had to try this coffee cake. I used more dark chocolate, added a little more cinnamon, and used pecans instead of hazelnuts. Yum! This coffee cake has a thick batter that bakes into a dense yet cakey chocolate-cinnamon treat. I found that my baking time was less than what the original recipe recommended, and you do want to be careful not to overbake this, or it will be a little dry.

This coffee cake is great for morning or anytime–especially if you are a fan of dark chocolate!

DARK CHOCOLATE-CINNAMON PECAN COFFEE CAKE by NancyCreative, adapted from Bon Appetit

Makes 9-12 servings in an 8 x 8″ pan

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for greasing pan
  • 1/2 cup pecans, chopped
  • 1 cup (6 ounces) dark chocolate chips
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar, divided
  • 2 cups all-purpose unbleached flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 cup plain whole Greek yogurt

Preheat oven to 350°. Butter 8” square baking pan; set aside.

Toss pecans, chocolate chips, cinnamon, and ¼ cup of the sugar in a small bowl; set aside.

In medium bowl, whisk flour, baking powder, baking soda, and salt; set aside.

In large bowl, using an electric mixer on high speed, beat butter and remaining ¾ cup sugar until light and fluffy, about 3 minutes. Beat in vanilla. Add eggs one at a time, beating to blend between additions and occasionally scraping down sides of bowl. With mixer on low speed, add dry flour mixture ingredients in 3 additions, alternating with yogurt in 2 additions, beginning and ending with dry ingredients. You’ll end up with a nice thick batter.

Spoon half of the batter into prepared pan and smooth top; top with half of the chocolate/pecan mixture. Spoon remaining batter over this and smooth top; top with remaining chocolate/pecan mixture. Bake cake until top of cake is golden brown and a tester inserted into the center comes out clean, 35-40 minutes (be careful not to overbake, or it will be dry! I recommend checking it after it has baked about 35 to 37 minutes). Transfer pan to a wire rack; let cake cool in pan before cutting into squares, and serve (if you want to eat it warm, let it cool about 10 minutes before cutting). I think this coffee cake tastes best warm myself!

Crunchy Honey Almond Granola Bars

I love those crunchy Nature Valley Granola Bars, so I thought this would be a good recipe to try. It originated from Americas’s Test Kitchen, but I actually found these granola bars on Bakerlady. I adapted the recipe by making them into Honey Almond Granola Bars by using almond extract instead of vanilla, canola oil instead of vegetable oil, adding a little extra salt, and leaving out the cinnamon, since I didn’t want it to take away from the almond flavor. I also added some milled flaxseed for extra fiber. I liked the way these turned out, so I plan on making them regularly! They don’t taste exactly like Nature Valley Granola Bars, but they have the same great crunchy texture. Since I eat a lot of granola bars, I’m sure I will save money making them myself! Making your own granola bars is also much more eco-friendly, too, when you think of all the packaging used for those store-bought bars.

This recipe works best in a 13 x 18″ pan; if you make it in a 10 x 15″ pan the bars will be thicker and harder to cut. Also, you should not use quick-cooking oats–be sure to use Old Fashioned Oats!

CRUNCHY HONEY ALMOND GRANOLA BARS by NancyC, adapted from Bakerlady

Makes a 13 x 18″ pan (about 24 to 30 bars, depending on the size you cut them)

  • 7 cups old-fashioned rolled oats
  • 1/2 cup canola oil
  • 1/2 to 3/4 teaspoon salt
  • 3/4 cup honey
  • 3/4 cup firmly packed brown sugar
  • 1 to 1 1/2 Tablespoons almond extract (if you just use 1 Tablespoon, the almond flavor will be very, very mild)
  • 1 to 2 Tablespoons milled or whole flaxseeds or wheat germ (optional)
  • 1 1/2 cups coarsely chopped or sliced almonds

Adjust oven rack to the middle of the oven and preheat oven to 375˚F.

Line a 13 x 18″ rimmed baking pan with aluminum foil or parchment paper.

In a large bowl, combine the oats, oil, and salt, mixing until oats are evenly coated. Transfer mixture to baking sheet and spread into an even layer. Bake, stirring oats every 10 minutes, until pale gold, 20 to 25 minutes. Remove pan from oven and lower temperature to 300˚F.

Combine honey and brown sugar in a saucepan and cook over medium heat for about 5 minutes, stirring constantly, to dissolve the sugar. Remove from heat and stir in the almond extract.

In large bowl, combine the oats, flaxseed or wheat germ (if using), and almonds, mixing until ingredients are blended well. Then add the honey mixture and stir with a large spoon or rubber spatula until the oats are thoroughly coated with the honey mixture.

Spray the baking sheet, still lined with foil or parchment paper, with non-stick spray and spread the granola mixture in an even layer on the sheet. Spray a large spoon or metal spatula with non-stick spray and firmly press the mixture into the pan. Make a flat, tight, even layer. Bake at 300˚F until golden, about 35 minutes.

Cool granola in baking sheet, on a wire rack, for 10 minutes before cutting into bars with a knife or pastry scraper. Cut bars all the way through (2 x 3″ is a good size), then allow the bars to completely cool. Do not wait any longer than 10 minutes to cut the bars because they harden up as they cool and become difficult to cut.

You can put the bars in a covered container and store for up to 2 weeks.

NOTE: You can make Cinnamon Walnut Granola Bars by substituting vanilla extract for the almond extract, chopped walnuts (or pecans) for the almonds, and adding 1 to 2  teaspoons of cinnamon to the honey and brown sugar mixture.

Chocolate Chip-Cherry Banana Bread

I love trying different variations on banana bread–there seem to be so many! I’ve made a Chocolate Chip Banana Bread before, which is really yummy, so a banana bread with chocolate chips and cherries in it sounded really good! This quick bread is such a treat and if you want a more elaborate dessert, you can add a scoop of vanilla or cherry ice cream on top of a warmed, thick slice and drizzle chocolate or hot fudge sauce over it all!
