Maple Oatmeal Scotchies

If you’re looking for a cookie that shouts “Autumn!,” take a look at these Maple Oatmeal Scotchies! This cookie is a different take on the traditional and well-loved Oatmeal Scotchies cookie. I changed up some ingredients and came up with this recipe and I must say, these are pretty yummy! These are chewy cookies with crispy edges. And their maple flavor comes from maple extract and pure maple syrup. The maple flavor goes really well with the butterscotch chips!

So if you’re in a fall cookie-baking mood, these are just the thing to make! I always feel good about eating oatmeal cookies too, because at least the oatmeal is healthy, right? 🙂 And I’m a big fan of maple syrup, so if you are too, you’ll want to try these out!

Maple Oatmeal Scotchies

MAPLE OATMEAL SCOTCHIES by NancyC
Makes about 40 cookies

1 1/4 cups all-purpose unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1 cup packed light brown sugar
2 large eggs
1 teaspoon maple extract
1 1/2 Tablespoons pure maple syrup
3 cups quick or old-fashioned oats (or a combination of both)
1 (11-ounce) package butterscotch chips (about 1 2/3 cups)

Preheat oven to 375˚F. Line 2 cookie sheets with parchment paper; set aside.

In a small bowl, blend flour, baking soda, salt, and cinnamon; set aside.

In large bowl, blend butter, granulated sugar, and brown sugar until creamy. Mix in the eggs, maple extract, and maple syrup, then gradually stir in the flour mixture from the small bowl. Fold in the oats and butterscotch chips, mixing until evenly incorporated in batter.

Chill cookie batter for 20 to 30 minutes, then drop by rounded Tablespoons onto prepared cookie sheets, spacing 2 inches apart.

Bake at 375˚F for 9 to 11 minutes, or until cookies are set and edges lightly browned. Cool cookies several minutes on baking sheet, then remove to a wire rack to cool completely.
