
I have to admit, I’m not very good about eating all the veggies I should, especially raw veggies. But recipes like this make it easier for me! The ingredients in this Broccoli, Cauliflower, and Cheese Salad are coated with a simple dressing that’s sweetened with honey. In addition to the broccoli and cauliflower, there’s also some red onion, bacon, sunflower kernels, two cheeses, and some raisins, too, if you want.
It’s easy to put together (the most time-consuming part is preparing the cauliflower and broccoli florets) and makes a great side dish. And it’s definitely a very tasty way to eat your veggies!
Broccoli, Cauliflower, and Cheese Salad
BROCCOLI, CAULIFLOWER, AND CHEESE SALAD
Makes 8-10 servings
5 cups cauliflower florets
5 cups broccoli florets
1 cup chopped red onion
3/4 cup mayonnaise
1/2 cup plain Greek yogurt
1/3 cup white wine vinegar
1 1/2 to 2 Tablespoons honey
1 (3-ounce) package real bacon pieces (save 1 Tablespoon for garnish)
1/3 cup shelled, roasted and salted sunflower seeds
Optional: 1 cup dark or golden raisins
2/3 cup shredded Cheddar cheese, plus 1 to 2 Tablespoons for garnish)
1/2 cup shredded Parmesan cheese, plus 1 to 2 Tablespoons for garnish)
In large bowl, toss cauliflower, broccoli, and onion; set aside.
In small bowl, stir together mayonnaise, yogurt, vinegar, and honey. Add to the veggies in the large bowl and toss so all the veggies are coated.
Stir in the bacon pieces, sunflower seeds, raisins (if using), Cheddar cheese, and Parmesan cheese. Toss everything well. Refrigerate for 2 to 3 hours. When ready to serve, garnish with both cheeses and bacon pieces.

As I mentioned in the recipe, the raisins are optional, but I really do like the punch of sweetness they add to this salad! Do you have a favorite veggie dish you like to make?
