Crinkle cookies are such a classic treat and if you make the cake mix version, they’re probably one of the easiest cookies ever! I’ve made Bite-Size Red Velvet Crinkle Cookies before, which are very yummy, and now these pretty pink and yummy Strawberry Crinkle Cookies! They’re pillowy-soft when you bite into them, with a cakey and chewy texture…and just the right amount of sweetness with the powdered sugar coating!
I took some photos of these cookies for Mary & Martha Home, arranging them on their Simply Elegant Serving Platter. It’s great for serving meals or desserts, and it’s also microwavable and dishwasher safe. I love the message on the platter, too—Give Thanks…Say Grace…Love Others. It’s nice to have a serving piece that’s both inspirational and functional to grace your table at meal time!
Back to the cookies…you can whip these up in no time because there’s just 4 different ingredients—a box of cake mix, eggs, some oil, and powdered sugar! That’s it! And you’ll end up with 18 to 20 good-sized cookies to enjoy!
Strawberry Crinkle Cookies
STRAWBERRY CRINKLE COOKIES by NancyC
Makes 18 to 20 cookies
- 1 (15.25-ounce) box Strawberry cake mix (I used the Pillsbury brand—also, you can substitute any cake mix flavor you like!)
- 2 large eggs
- 1/3 cup canola oil or light olive oil (or vegetable oil)
- 1/2 cup powdered sugar, to roll the cookie dough in
Preheat oven to 350˚F. Line two cookie sheets with parchment paper; set aside. Put powdered sugar in a small bowl and set aside.
In a medium-size bowl, combine the dry cake mix, oil, and eggs, mixing until ingredients are combined well and a soft dough forms. Using your hands, a spoon, or a cookie scoop, form cookie dough into 1 1/2″ balls and roll balls in powdered sugar to completely coat. Place on prepared cookie sheets about 2 inches apart.
Bake at 350˚F for 10 to 11 minutes, until the tops of the cookies are crackly and centers of cookies are set. Remove from oven, and after 1 to 2 minutes, transfer cookies from cookie sheets to wire racks and cool completely—or eat the cookies while warm! 🙂
