Loaded Baked Potato Dip

If you’re looking for an easy snack to make for any kind of get-together, like Game Day for example, you can whip up this Loaded Baked Potato Dip in no time! It’s such an easy recipe and it tastes so good! This dip is loaded with everyone’s favorite baked potato toppings: sour cream, cheddar cheese, sliced green onions, bacon bits or pieces, and some Ranch Dressing Mix to give everything a little extra zing! Serve this dip with wavy potato chips—I’m not sure why, but the wavy (or ruffled) chips somehow taste better with this! 🙂

I took some photos of this dip for Mary & Martha Home, showing it off in one of their Simply Elegant Nested Bowls, which come in a set of 3—small, medium, and large. I used the small bowl for the dip—the medium and large bowls can be used for chips and pretzels. These ceramic bowls are great for serving so many things—the large and medium-size ones for salads, pasta salads, and veggies, and the small one for dips, spreads, sauces, or toppings.

If you happen to have any of this dip left over after your get-together (don’t count on it, though!), you can use your extra dip to top some baked potatoes at your next meal. This makes a great side dish or, if you’re using good-sized baked potatoes, it makes a great meal in itself!

Loaded Baked Potato Dip

LOADED BAKED POTATO DIP by NancyC                                

Makes about 8 servings

  • 2 cups (16-ounces) sour cream or light sour cream
  • 1 (1-ounce) package Ranch Dressing and Seasoning Mix
  • 2 cups (8-ounces) shredded sharp Cheddar cheese, divided
  • 1/3 cup thinly-sliced green onions
  • 1/2 cup real bacon pieces or bits (a 2.5-ounce package will provide enough bacon)
  • Optional: salt and pepper to taste, and/or a dash of hot sauce
  • For garnish: remaining 1/4 cup cheddar cheese; 1/2 to 1 Tablespoon each green onion slices and real bacon pieces or bits

In large bowl, mix the sour cream and ranch dressing mix, blending well. Stir in 1 3/4 cups of the shredded Cheddar cheese, the sliced green onions, and the bacon pieces or bits. If desired, add some salt and pepper to taste, or a dash of hot sauce.

Spoon dip into a serving bowl, then cover and refrigerate for an hour before serving (can also refrigerate overnight). Before serving, garnish with remaining 1/4 cup Cheddar cheese, and 1/2 to 1 Tablespoon each green onion slices and real bacon pieces or bits. Serve with wavy potato chip, pretzels, and/or waffle fries.

I like this dip best with wavy chips, but it’s also pretty good with pretzels, and you can even serve it with waffle fries, which I mentioned in the recipe above.

    • It actually doesn’t have any potatoes in it, but it’s all the ingredients you would put on a baked potato—all in a dip! It would actually be a great topping for a baked potato, too! 🙂
