Are you looking for a super-easy pumpkin-flavored dessert, snack, or brunch item that’s also very yummy? Then these Easy Pumpkin Muffins are just what you’re looking for! The basic recipe requires just TWO ingredients: a box of spice cake mix and a can of pumpkin purée!
I know it’s hard to believe that you can make these with just two ingredients, but it’s true! Then, if you want to get a little fancy, you can add in some chocolate chips (I think the mini semi-sweet chocolate chips work the best), or raisins, or chopped nuts. But don’t feel pressured to use any add-ins because these muffins taste great plain too! When I made these, I made a batch of plain pumpkin muffins and a batch with mini semi-sweet chocolate chips. I could not believe how yummy they were!
One important tip for making these: if you want nicely rounded muffin tops, it really helps to use a scoop to fill your muffin cups. I used a scoop that was 2″ in diameter. Your muffins will have a nice shape, in addition to being deliciously moist and tasty! 🙂
This recipe is from Mary & Martha , and I took some photos of these muffins for them, arranged on one of their serving platters—the Grace & Gratitude Platter. This platter is actually large enough to serve a holiday turkey or ham on! But it works well for desserts, snacks, or appetizers, too!. And I love the words and Scripture that are incorporated into the design.

Easy Pumpkin Muffins
EASY PUMPKIN MUFFINS (recipe courtesy of Mary and Martha)
Makes 12 muffins
- 1 (15.25-ounce) box spice cake mix
- 1 (15-ounce) can pumpkin purée (not pumpkin pie mix)
- Optional add-ins: 1 cup semi-sweet or mini semi-sweet chocolate chips; OR 1 cup raisins; OR 1 cup chopped walnuts or pecans (or add 1/2 cup each of two different add-ins)
- Cooking spray, for spraying muffin tin or paper liners
Preheat oven to 350˚F. Spray a muffin tin with cooking spray or line with 12 paper liners. Tip: Even if using paper liners, spray the liners very lightly with cooking spray to prevent muffins from sticking.
In large bowl, stir together the spice cake mix and the pumpkin puree, mixing ingredients well. Optional: Fold in the chocolate chips, if using, stirring to blend evenly in batter.
Fill muffin cups with batter (using a scoop helps give the muffins a nice rounded shape—I used a 2-inch diameter scoop). Bake at 350˚F for 18-20 minutes, until toothpick inserted in centers comes out clean.
Remove muffins from pan and let cool or eat warm.
