Sunken Apple Pie Bread

This recipe was kind of an experiment one day when I was craving an apple dessert. I didn’t have time to make a pie and didn’t have any apples, but I did have a can of apple pie filling. So I tried making this apple bread. I peeked at it while it was baking, and it was rising very nicely. After it was done, looking like a beautifully risen loaf, I let it cool on top of the stove in the loaf pan and went off to do something else for the next 10 to 15 minutes.

When I came back, much to my dismay and shock, the loaf had sunken! Really sunken. After staring at it for a few minutes, I decided that it wasn’t quite so bad-looking after all…the sunkeness gave the loaf a somewhat rustic look . I decided to dust it with some powdered sugar and thought that was a nice touch. The more I looked at it, the more I liked it! This imperfect-looking sunken loaf was very appealing to me for some reason.

I still hadn’t tasted it, so that was the next step. Well, I thought it was great—it was very dense and moist…a cross between apple bread and bread pudding. If you’re craving something with an apple pie taste but want something easy and quick, you just may want to try this out. There’s really no way you can mess it up, because it’s going to be sunken…but I just think that adds to the charm of it. And it’s yummy, so who cares if it’s sunken? 🙂

Updated Note: HERE’S SOME GOOD NEWS—after posting this recipe, I heard from readers, telling me this bread did NOT sink when they made it!!! So maybe something was wrong with the baking powder I used. At any rate, whether this sinks or stays risen for you, I’m sure you will enjoy this loaf! 🙂

SUNKEN APPLE PIE BREAD by NancyC

Makes one 9 x 5″ loaf

  • 1/2 cup (1 stick butter), softened
  • 1 cup brown sugar, packed
  • 2 eggs
  • 2 cups all-purpose flour (I used unbleached flour)
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 (21-oz.) can apple pie filling
  • powdered sugar for dusting on top of the loaf

Preheat oven to 350˚F. Grease and flour a 9 x 5″ loaf pan.

Open the can of apple pie filling and spoon entire contents into a small bowl. Cut apple wedges into small chunks (thirds or fourths) with a knife; set aside.

In large bowl, cream softened butter and brown sugar until well-blended. Add eggs and blend well.

In medium bowl, mix flour, baking powder, and cinnamon, blending well. Add these dry ingredients to the butter-sugar-egg mixture, and blend everything well. Then add in the apple pie filling (with your cut-up wedges) and stir mixture until well blended, but don’t over mix.

Pour mixture into your greased and floured 9 x 5″ loaf pan and bake at 350˚F for 60 to 63 minutes, or until top of loaf is set and toothpick inserted in center comes out clean (it may not come out totally clean because of the denseness of the bread). Remove from oven and let cool in pan for 10-15 minutes…if the loaf sinks, it will start sinking into it’s sunken form as it cools—or it may not sink at all!

Remove from pan to a wire rack to cool and dust with powdered sugar while it’s still slightly warm. You can eat it then, or let it completely cool before eating it…the loaf will be easier to slice when it’s completely cool.

  1. Well on Saturday I tried to make a grilled cheese sandwich for the first time. HA!!!! Fail. I know you’re thinking “How can you fail at making a grilled cheese sandwich?” – Just leave it to Tia. I had one side down too long and when I turned to “grill” the other side, the first side was TAR BLACK. Yep. *shakes head*

    But this apple pie bread looks fantastic. I like moist dense breads so this is perfect for me!!!

  5. I made it tonight. My loaf pan was really full, so it had to bake a little longer. I think next time I will up the cinnamon and add a little salt. It is very yummy!!!

    • Glad you liked the loaf, Sara! Your pan may have been fuller if it was an 8×4″ size; I used a 9×5″ pan. But yes, it still works, you just need to bake it a little longer. I bet adding more cinnamon would be great–I’ll have to try that myself! 🙂

  6. I’ve been wanting to make this for a while now and finally got the stuff and got home and no loaf pan :(. 40 minutes in a medium muffin tin and it turns out wonderful though and makes a dozen and a half delish apple pie muffins!!!

  8. I just finished baking this. I didn’t have the patience to wait for it to cook in a loaf pan *pregnancy craving* So I made them as muffins. They are wonderful. Just what I wanted! Great recipe!! 😀
