If you like pumpkin-flavored things, this is a super-easy recipe you can make for breakfast or even as a snack. Everything about this is healthy…pure pumpkin mixed into yogurt with honey, cinnamon, and other spices, and topped with granola. Not only is it healthy, it’s yummy, too! It makes a great brunch item. This recipe makes 1 large serving or 2 smaller servings. You can double or triple the amounts if you want to make a larger batch.
PUMPKIN-SPICE YOGURT by NancyCreative
Makes 1-2 servings
- 1 cup plain or vanilla yogurt
- 1/3 cup pure pumpkin from can
- 1 1/2 – 2 Tablespoons honey
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger
- 1–2 Tablespoons granola cereal for garnish
In small bowl, mix yogurt and pumpkin together, blending well. Stir in honey and then the cinnamon, nutmeg, and ginger, and blend well. Spoon into 1 or 2 small serving dishes and sprinkle with granola cereal.
