Deviled Eggs with Bacon and Chives

I’m a big fan of deviled eggs, especially in the summer! There’s a recipe I posted earlier that I really like, Creamy Deviled Eggs, but I thought I’d experiment and try something new…and I really like these deviled eggs, too. You just can’t go wrong when you add bacon and chives to a recipe! 🙂

DEVILED EGGS WITH BACON AND CHIVES by NancyCreative

  • 1 dozen hard-boiled eggs, peeled
  • 5 Tbsp. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. white vinegar
  • 1/2 – 1 tsp. mustard powder
  • 2 tsp. yellow mustard
  • salt and pepper to taste
  • 2 Tbsp. fresh chives, chopped
  • 4 slices bacon, cooked and crumbled into bits (or 4 heaping Tbsp. real bacon bits)
  • FOR GARNISH: 2 slices bacon, cooked and crumbled into bits (or 2 heaping Tbsp. bacon bits), 2 Tbsp. fresh chives, chopped, and 2 Tbsp. shredded Parmesan cheese

Slice the hard-boiled eggs in half lengthwise and remove the yolks; set whites aside. Place the yolks in a small bowl and add mayonnaise, lemon juice, vinegar, mustards, and salt and pepper to taste. Stir well to combine these ingredients, then add in the chopped chives and bacon. Using a spoon, fill egg white halves with egg yolk mixture, shaping the mixture into nice little mounds. To garnish, sprinkle the deviled eggs with bacon bits, chives, and shredded Parmesan cheese. Refrigerate until ready to serve. Makes 24 halves.
